PEMPEK - PALEMBANG, SOUTH SUMATERA
Pempek is traditional food from Palembang, South Sumatera. Pempek main
attraction used to the taste of pempek that feed on fish. It will be
more delicious when we eat pempek rith vinegar sauce. Here's
how to make pempek :
Ingredients :
• 1.5 kg of corn starch
• 1 kg of fish belida(adjust) polished / mackerel / Catfish
• Salt
• 1 cup of ice water mature
• 1 liter of water
• eggs
How to make :
- Prepare the basin and finely chopped, add ice and salt and stir until the dough is mixed with minced fish.
- Dough until the dough chewy taste of chopped fish enters corn starch.
- Rub our hands with flour so that the dough is not sticky. Shape pempek according to the taste, it can be oval, round, and can be filled with eggs.
- Heat the water in the pan, wait until boiling and then put in pempek already formed. Wait until pempek mature and floats. Lift and drain.
Materials Vinegar :
- 200 grams of brown sugar
- 30 grams tamarind water
- 1 liter of drinking water
- Garlic
- 1 teaspoon salt
- 2 tbsp of shrimp
- Chili (depend on our taste)
How to make vinegar :
1. first, heat the water in a pan, add the sugar and brown sugar and tamarind water. Boil until boiling.
2. Puree garlic, salt, shrimp and chili, then add to the pan.

Serving suggestions :
Serve pempek in a plate and pour the sauce/vinegar into a bowl. Add cucumber to make pempek moe delicious (optional on our taste). Pempek ready to served. Good luck and happy cooking. :)
