PEPES IKAN - WEST JAVA
Fish food sources of vegetable protein are good
for health. One menu of processed fish is steamed fish. Here is recipe to make
pepes ikan :
Ingredients :
- 2 fish (according to taste, can use carp, mackerel, tuna, etc.)
- ½ teaspoon sugar
- Basil leave
- Banana leaves
- 1 tomato
- Bay leaf
- Lime
- Water
- Lemongrass
Seasoning Mashed :
- Galangal
- Turmeric
- Chili
- 2 Candlenut
- Coriander
- 6 Onions
- 3 Garlics
- Salt
How to make :
- Wash all ingredients and seasonings.
- Give the lime juice on the fish to reduce the stench of fish.
- Blend the spices then thinly sliced tomatoes (optional).
- Place the fish in banana leaves, then rub the seasoning and tomato slices. Add lemongrass and bay leaves then wrap. Tighten the package by using a stick.
- Steam until cooked and then burned with coals over medium heat until the banana leaves change color to brown.
- Pepes fish ready to be served.
